This is not one of those blogs where there’s a fetching tale or silly anecdote that forces you to scroll down endlessly looking for the actual recipe. You want a recipe for delicious keto vanilla ice cream right? Cool.

Appliances, Cookware, and Ingredients

The following makes enough for what I would consider 2 servings; perfect to split!

Cusinart Ice Cream Maker
– 1 cup heavy whipping cream
– 1/2 cup water
1/4 cup Lakanto Monkfruit 1:1 Sugar Substitute
1/4 teaspoon vanilla extract
LUV Keto Chocolate Chunks

Directions

Make sure the ice cream maker drum is completely frozen (I always keep mine in the deep freeze in the garage so it’s ready to go).

Mix the heavy cream, water, vanilla extract, and monkfruit sweetener. Whisk vigorously for a few minutes to introduce a little bit of air to the mixture; it makes for a better consistency with the final product.

NOTE: I would say that the Monkfruit sweetener and vanilla extract measurements are negotiable. You may find you like more or less, depending on taste.

Add to the ice cream maker, turn it on, and in about 15 minutes, top with the chocolate chunks. Enjoy!
